Grilled Zucchini Noodles with Pesto. For Garnet and the 2006 Games Gazette.
| 4 | medium Squash, Summer, Zucchini, Includes Skin |
| 1 | tbsp olive oil |
| 1 | clove Garlic, Raw, minced |
| 2 | tbsp (Wegmans) Pesto Sauce |
- Peel Zucchini
- Thin slice Zucchini length wise
- Cut in 1/4" strips (about the size of fettuccine
- Mix with the olive oil and garlic
- Grill over charcoal on a vegetable grill for about 5 minutes or until soft.
- Add to pesto to grilled Zucchini noodles.
- Toss and serve.
