Ingredients

cup onion, diced |

cup spinach, chopped |

cup mushrooms, chopped |

cup tomato, chopped |

tsp olive oil |

cup cheese, swiss |
| 1 1/2 |
cup cottage cheese |
| 4 |
eggs |
| 1/3 |
cup skim milk |
Directions
- pre heat oven to 400
- coat a 8x8 pan with non stick cooking spray (pam)
- saute' vegetables in olive oil until about half done season with salt and pepper
- combine swiss cheese and cottage cheese set aside
- beat eggs and milk togther for about two minutes or until very well mixed (will look watery)
- Place half of cheese mixture in bottom of prepared pan
- add Vegetable mix top with remaining cheese mix
- pour egg over top, Bake for 35 - 40 min or until knife comes out clean.
- Let rest for 5 to 10 minutes before serving
- If vegtables have lots of water in them they will leave some liquid along side this is not egg it is liquid from vegies just FYI.
