crustless garden quiche

Makes 6 servings

great light lunch

Ingredients
1/4 cup onion, diced
1/2 cup pepper, diced,
1 cup spinach, chopped
1/2 cup mushrooms, chopped
1/2 cup tomato, chopped
1 tsp olive oil
1 cup cheese, swiss
1 1/2 cup cottage cheese
4 eggs
1/3 cup skim milk
Directions
  1. pre heat oven to 400

  2. coat a 8x8 pan with non stick cooking spray (pam)

  3. saute' vegetables in olive oil until about half done season with salt and pepper

  4. combine swiss cheese and cottage cheese set aside

  5. beat eggs and milk togther for about two minutes or until very well mixed (will look watery)

  6. Place half of cheese mixture in bottom of prepared pan

  7. add Vegetable mix top with remaining cheese mix

  8. pour egg over top, Bake for 35 - 40 min or until knife comes out clean.

  9. Let rest for 5 to 10 minutes before serving

  10. If vegtables have lots of water in them they will leave some liquid along side this is not egg it is liquid from vegies just FYI.
