Pita breads are available in the deli section of most supermarkets. They come in various sizes and flavors. Especially good with chicken picked off the bones from making chicken stock. From the American Diabetes Association. whole-wheat pita bread
cooked chicken,
large fresh tomatoes,
diced seedless cucumber
plain low-fat yogurt
diced seedless cucumber
clove garlic,
vinegar
fresh mint cvt

Ingredients

(large, 6.5 inches) whole-wheat pitas |
| 4 |
oz cooked chicken, sliced |
| 1 |
large fresh tomatoes, sliced |
| 1 |
diced seedless cucumber |
| 1/2 |
cup plain low-fat yogurt |
| 1/4 |
cup diced seedless cucumber |
| 1 |
clove garlic, minced |
| 1 |
tbsp vinegar |
| 1 |
tbsp fresh mint, chopped |
Directions
- Combine the last five ingredients to create the herbed yogurt. Chill to allow flavors to blend. (May also be used as a dip or salad dressing).
- Heat pitas. Cut in half crosswise and pull apart to make pockets.
- Divide the chicken, tomato, and cucumber evenly and place in the four pita pockets.
- Top with herbed yogurt. Garnish with dried oregano.
