Delicious healthy muffin for a quick breakfast on the run!
| 1 1/2 | cups Oatmeal |
| 1 1/4 | cups flour |
| 3/4 | tsp cinnamon |
| 3/4 | tsp nutmeg |
| 1/8 | tsp allspice |
| 1 | tsp Baking powder |
| 3/4 | tsp baking soda |
| 1 | cup unsweetened applesauce |
| 1/2 | cup soy milk |
| 1/2 | cup brown sugar |
| 2 | tbsp oil |
| 1 | Egg white |
| 1/4 | cup oatmeal |
| 1 | tbsp brown sugar |
| 1/8 | tsp cinnamon |
| 1 | tbsp margarine (melted) |
In large bowl, combine oatmeal, flour, cinnamon, nutmeg, allspice, baking powder and baking soda. Add applesauce, soy milk, brown sugar, oil and egg white; mix until dry ingredients are just moistened. Fill muffin cups almost full. In small bowl, combine topping ingredients; sprinkle evenly over batter. Bake in 400 oven for 20 minutes or until deep golden brown.Categories
