They're like little soufflés... or brownies. Soo good.
I thought I was doing it wrong when I made them, but in reality the cookies are just kind of weird.
The size of the cookies is up to you, but I ended up only needing one baking sheet.

Ingredients
| 6 |
oz. semisweet chocolate (chopped) |
| 2 |
large egg whites, at room temperature |
| 1/8 |
teaspoon cream of tartar |
| 1/2 |
teaspoon vanilla extract |
| 1/4 |
cup granulated sugar |
| 3/4 |
cup finely chopped walnuts |
Directions
- Put oven racks in the upper & lower third of the oven.
- Preheat to 350°F. Line two baking sheets with parchment paper.
- Put the chocolate in a small saucepan and melt it, stirring ocassionally with a rubber spatula. Remove from heat and set aside.
- Beat the egg whites with the cream of tartar to soft peaks. With beaters running gradually ad the vanilla and sugar and beat to stiff peaks.
- Pour the nuts and the melted chocolate over the whites, and using a rubber spatula, gently fold them in.
- Immediately, spoon the batter onto the baking sheets, leaving 1-inch between the cookies.
- Bake 10-12 minutes or until the cookies are shiny and cracked. They will be firm on the outside but still chewy on the inside.
- Using a metal spatula, transfer the cookies to racks to cool.
