Mojo Roast Pork Recipe

Ingredients
1 pound boneless pork loin, trimmed
1/3 cup orange juice
1/4 cup fresh lime juice
1 teaspoon sugar
1 teaspoon dried oregano, crushed
3 cloves garlic, minced
Directions
  1. Place pork loin in a plastic bag in a shallow dish. Combine orange juice, lime juice, sugar, oregano, and garlic in a small bowl; pour over pork. Seal bag. Refrigerate overnight, turning the bag occasionally.

  2. Preheat oven to 350 degrees. Drain meat, discarding marinade. Place meat on a rack in a shallow baking pan. Insert a meat thermometer so bulb is in center of pork. Sprinkle with salt and pepper and roast for 45 - 60 minutes or until thermometer registers 160 degrees. Let stand 5 minutes before slicing.
