| 1 | pound boneless pork loin, trimmed |
| 1/3 | cup orange juice |
| 1/4 | cup fresh lime juice |
| 1 | teaspoon sugar |
| 1 | teaspoon dried oregano, crushed |
| 3 | cloves garlic, minced |
- Place pork loin in a plastic bag in a shallow dish. Combine orange juice, lime juice, sugar, oregano, and garlic in a small bowl; pour over pork. Seal bag. Refrigerate overnight, turning the bag occasionally.
- Preheat oven to 350 degrees. Drain meat, discarding marinade. Place meat on a rack in a shallow baking pan. Insert a meat thermometer so bulb is in center of pork. Sprinkle with salt and pepper and roast for 45 - 60 minutes or until thermometer registers 160 degrees. Let stand 5 minutes before slicing.
