Quinoa Pilaf Recipe

Makes 1 serving


High fiber and protein, filling, under 300 calories

Ingredients
1/4 cup Dry Quinoa
1 cup baby spinach
1/8 cup Pine nuts
1 pinch of fresh Basil
1/4 onion
1 clove garlic
Directions
  1. Bring 1 cup chicken or veg stock to a boil

  2. add garlic, onion and basil (and pepper if you like).

  3. Put in dry quinoa and simmer

  4. Wait 10 mins and add spinach and toasted or baked nuts

  5. Simmer until liquid is absorbed

  6. Fluff with fork and eat
