| 1/4 | cup Dry Quinoa |
| 1 | cup baby spinach |
| 1/8 | cup Pine nuts |
| 1 | pinch of fresh Basil |
| 1/4 | onion |
| 1 | clove garlic |
- Bring 1 cup chicken or veg stock to a boil
- add garlic, onion and basil (and pepper if you like).
- Put in dry quinoa and simmer
- Wait 10 mins and add spinach and toasted or baked nuts
- Simmer until liquid is absorbed
- Fluff with fork and eat
