| 1 | zucchini, chopped into large pieces |
| 1 | squash, chopped into large pieces |
| 1 | onion, chopped into large pieces |
| 8 | cloves garlic, chopped into large pieces |
| 1 | eggplant, chopped into large pieces |
| 1 | sweet green pepper, chopped into large pieces |
| 1 | tomato, chopped into large pieces |
| 1 | carrot, diced |
| 2 | stalks celery, diced |
| 4 | oz tomato sauce |
- chop all vegetables into large pieces
- place eggplant on the bottom of a pot (can spray some PAM on it) then add other vegetables in any order
- let simmer until soft
- add tomato paste, mix, and season to taste
- cook until all vegetables (especially the carrot) is soft
- serve chilled
