Vegetable Medley Recipe

very healthy and delicious! can add and/or substitute with any vegetable you have lying around the fridge.

Ingredients
1 zucchini, chopped into large pieces
1 squash, chopped into large pieces
1 onion, chopped into large pieces
8 cloves garlic, chopped into large pieces
1 eggplant, chopped into large pieces
1 sweet green pepper, chopped into large pieces
1 tomato, chopped into large pieces
1 carrot, diced
2 stalks celery, diced
4 oz tomato sauce
Directions
  1. chop all vegetables into large pieces

  2. place eggplant on the bottom of a pot (can spray some PAM on it) then add other vegetables in any order

  3. let simmer until soft

  4. add tomato paste, mix, and season to taste

  5. cook until all vegetables (especially the carrot) is soft

  6. serve chilled
