Homemade chicken salad using boneless, skinless chicken breast.

Ingredients
| 3 |
lbs chicken breast, skinless boneless |
| 2 1/2 |
ounces celery, diced fine |
| 4 1/2 |
ounces onion, diced fine |
| 2 |
ounces vinegar |
| 1 |
cup mayonnaise |
Directions
- Place chicken breast in a pot and cover with cold water. Season the water with your favorite aromatics (celery, onion and garlic) all rough chopped. Bring to a light boil and then simmer until done.
- When done remove from the broth and let the chicken cool down. When cool chop the breast meat (as fine as you like it) and place into a large bowl.
- Add the diced vinegar, onion and celery and mix well.
- Place in fridge. Serve cold before serving. Serve on bread, crackers or as a salad topper.
