A tangy, reduced-calorie tuna salad recipe.
| 6 | oz tuna |
| 1/4 | c red onion, minced |
| 1/4 | c celery, chopped |
| 2 | tbsp pickle relish |
| 2 | tbsp light mayonnaise |
| 2 | tbsp fresh lemon juice |
| 1/2 | cup apple, chopped |
| 1 | tomato, chopped |
| 2 | cups lettuce |
| 1/2 | c pineapple |
| 1/4 | c fat free sour cream |
| 1/4 | c fat free yogurt |
| 1 | salt |
| 1 | black pepper |
- In a small bowl, add light mayo, fat free sour cream, and fat free yogurt, 4 Tbsp pineapple juice. Blend ingredients.
- In another bowl, add drained water-packed light tuna, red onion, celery and relish. Blend thorughly. Add apples, lemon juice, sweetener. Blend throughly. Add the dressing mixture. Blend throughly. Season with salt, black pepper, or other desired seasonings. Chill.
- Serve with chopped tomato, lettuce, fruit.
