Spinach and Feta Muffins!

Makes 12 servings

Another YUMMY savoury muffin recipe. There's not amny round are there?! Its super healthy, and only 169 cals.

Ingredients
2 eggs
1/4 cup olive oil
1/2 cup low-fat yogurt
1 1/2 cups flour
100 g feta cheese, crumbled
1/4 cup parmesan cheese
2 cups baby spinach leaves, roughly chopped (stems removed)
12 dried tomatoes, cut into thirds
2 tblsp marjoram or oregano, finely chopped
Directions
  1. Pre heat oven to 200 deg cel

  2. whicsk together eggs, oil and yogurt

  3. add flour, feta, parmesan and spinach, and stir until combined.

  4. Spoon mixture into tins and top with a piece of tomato and sprinkle with marjoram or oregano.

  5. bake for 12-15 mins, until puffed and lightly golden
