Curried Sweet Potato Soup Recipe

Adapted from recipe by Polly Pitchford, Full Spectrum Health? Red garnet sweet potatoes are best if you can find them. In fact, any orange vegetable works well here: butternut squash or carrots for example. Spanish onion, curry, sweet potatoes, salt, olive oil cumin water or chicken broth ginger powder cvt

Ingredients
1/2 Spanish onion (wt?), chopped (or yellow or red)
1 teaspoon olive oil
1 teaspoon curry powder
520 g (about 4) sweet potatoes, peeled and cubed
4 cups water or chicken broth
1 teaspoon salt, or to taste
1/2 teaspoon cumin
1/2 teaspoon ginger powder
Directions
  1. In a large soup pot, saute onion with spices in the olive oil until onion is soft, about 5 minutes.

  2. Place sweet potatoes or squash in soup pot with the water and salt. Boil gently until vegetables are soft. Add the sauteed onions.

  3. Puree in a blender in batches.

  4. Garnish with chopped parsley, scallions or garlic croutons.
