| 1/2 | Spanish onion (wt?), chopped (or yellow or red) |
| 1 | teaspoon olive oil |
| 1 | teaspoon curry powder |
| 520 | g (about 4) sweet potatoes, peeled and cubed |
| 4 | cups water or chicken broth |
| 1 | teaspoon salt, or to taste |
| 1/2 | teaspoon cumin |
| 1/2 | teaspoon ginger powder |
- In a large soup pot, saute onion with spices in the olive oil until onion is soft, about 5 minutes.
- Place sweet potatoes or squash in soup pot with the water and salt. Boil gently until vegetables are soft. Add the sauteed onions.
- Puree in a blender in batches.
- Garnish with chopped parsley, scallions or garlic croutons.
