Stevia Lemon Poppyseed Muffins- 102 Cals! Recipe

Makes 12 servings


Delicous whole grain muffins made without the use of sugar, butter or oil! MMMMMM! EXCELLENT FLAVOUR!

Ingredients
2 cups whole wheat flour
1/4 cup poppy seeds
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 egg, lightly beaten
1/4 cup skim milk
1/4 cup unsweetened applesauce
1 juice and rind from one lemon
Directions
  1. Combine flour, 1 tsp stevia powdered extract, baking soda and powder, poppy seeds and salt together. Set aside.

  2. Next, in a seperate bowl, mix together egg, skim, applesauce and lomon rind and zest.

  3. Fold the two sets of ingredients together until just combined- be SURE not to overmix!

  4. Spoon into muffin pan lightly sprayed w/ pam, makign sure they're onyl 47g. each.

  5. Bake @ 375 for 25 minutes

  6. ENJOY! mmmmmmmmmmm
