Delicous whole grain muffins made without the use of sugar, butter or oil! MMMMMM! EXCELLENT FLAVOUR!
| 2 | cups whole wheat flour |
| 1/4 | cup poppy seeds |
| 1 | tsp baking soda |
| 1 | tsp baking powder |
| 1/4 | tsp salt |
| 1 | egg, lightly beaten |
| 1/4 | cup skim milk |
| 1/4 | cup unsweetened applesauce |
| 1 | juice and rind from one lemon |
- Combine flour, 1 tsp stevia powdered extract, baking soda and powder, poppy seeds and salt together. Set aside.
- Next, in a seperate bowl, mix together egg, skim, applesauce and lomon rind and zest.
- Fold the two sets of ingredients together until just combined- be SURE not to overmix!
- Spoon into muffin pan lightly sprayed w/ pam, makign sure they're onyl 47g. each.
- Bake @ 375 for 25 minutes
