Berry Cheesecake Muffins Recipe

Light and Delicious Versatile Muffin

Ingredients
2 Eggs
1/3 cup applesauce
1/4 cup splenda
1 banana
1 1/2 cup whole wheat flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/3 cup skim milk
6 oz fat free cream cheese
1/3 cup splenda
1 egg
1 1/2 cups strawberries
Directions
  1. Mix applesauce, 1/4 cup splenda,2 eggs, and mashed banana with hand mixer.

  2. In separate bowl stir together whole wheat flour, baking powder, and cinnamon.

  3. Mix dry ingredients with applesauce mixture. Stir in skim milk.

  4. In separate bowl combine 6 oz fat free cream cheese, 1/3 cup splenda, and 1 1/2 cups blended strawberries ( be sure to measure the berries before putting them in the blender )
