Light and Delicious Versatile Muffin
| 2 | Eggs |
| 1/3 | cup applesauce |
| 1/4 | cup splenda |
| 1 | banana |
| 1 1/2 | cup whole wheat flour |
| 1 1/2 | tsp baking powder |
| 1 1/2 | tsp cinnamon |
| 1/3 | cup skim milk |
| 6 | oz fat free cream cheese |
| 1/3 | cup splenda |
| 1 | egg |
| 1 1/2 | cups strawberries |
- Mix applesauce, 1/4 cup splenda,2 eggs, and mashed banana with hand mixer.
- In separate bowl stir together whole wheat flour, baking powder, and cinnamon.
- Mix dry ingredients with applesauce mixture. Stir in skim milk.
- In separate bowl combine 6 oz fat free cream cheese, 1/3 cup splenda, and 1 1/2 cups blended strawberries ( be sure to measure the berries before putting them in the blender )
