Bahamian style potatoe salad
| 1 | large potatoes, peeled and quartered |
| 1 | pinch of Salt |
| 1/4 | teaspoon black pepper |
| 1/2 | ounce Onion, minced |
| 1/2 | ounce green pepper |
| 1 | teaspoon Vinegar |
| 1 | teaspoon Mustard |
| 1 | egg |
| 1 | tablespoon mayonnaise or whipped salad-dressing |
- Peel the potatoes and cut into 3/4" x 3/4 cubes and then boil or steam them until a fork can go through the potatoes easily. Do not cook potatoes to soft that they break apart when sticked with a fork.
- You also need boil or steam the eggs. To save water, I put them in with the potatoes.
- While the potatoes are boiling, finely dice your onion and green peppers.
- Once the potatoes are cooked, remove them from the hot water and cool them off by running cold water over them. It is imperative that they are neither luke warm or hot.
- Peel and dice the boiled eggs. Add them to the potatoes followed by the onions, green peppers, vinegar, mustard and the mayonnaise or whipped salad dressing and then stir until well mixed. Depending on your personal taste, you may choose to add more of less dressing but don't add too much or it will make the potatoes very watery.
- Add salt and/or pepper until you find the desired taste.
