Chili lime chicken

Makes 4 servings

Chili Lime Chicken

Ingredients
500 g chicken breast, no skin
2 tbsp lime juice
2 tsp chili peppers, sliced
200 g yoghurt, natural, low fat
150 ml milk
Directions
  1. Cut chicken fillets into 2 pieces.

  2. Squeeze the lime juice over the chicken and add chopped chillies.

  3. Now pour over natural yoghurt, mix to ensure the chicken is coated, cover and leave to marinade for around half an hour.

  4. Heat a non-stick frying pan and poach the chicken in the milk and olive oil until the juices run clear. Add the rest of the marinade into the pan and simmer for a few minutes.

  5. Pour this over the chicken and serve with rice or naan bread and green salad.
