My Mom's (Modified) Chicken Salad Recipe

Makes 1 serving


This is a slightly editted version of my mom's awesome recipe. The halved grapes make it seem like you're indulging, but can easily be cut for caloric sake. This makes a giant serving and is very filling. Hope you like it!

Ingredients
1 cup grilled chicken breast
1 tsp. soy sauce
1 tsp. grated ginger
1/2 tsp. lemon juice
1/4 cup grapes
1/4 c. chopped celery
2 tbs. light mayonnaise
Directions
Mix all except almonds. Serve over romaine with some flax bread toast triangles.
