chicken breasts stuffed with ham and cheese
| 1/4 | cup mozzarella, part-skim |
| 2 | tbs ham, chopped |
| 2 | tsp Dijon mustard |
| 1 | freshly ground pepper |
| 1 1/2 | lbs chicken breasts (4), skinless, boneless |
| 1 | egg white |
| 1/2 | cup breadcrumbs |
| 2 | tsp olive oil, extra virgin |
- preheat oven to 400 degrees. use baking sheet and lightly coat with cooking spray
- mix cheese, ham, mustard and pepper in a small bowl
- slit open the breasts horizontally w/o cutting all the way through
- stuff the breasts with the cheese mix and close the opening by pressing edges together.
- lightly beat egg white with a fork in a med bowl. place breadcrumbs in a shallow dish. dip breasts in egg, then in breadcrumbs.
- heat oil in a large skillet over med-high heat and cook breasts until browned on one side (~ 2min). Place chicken breasts, browned side up, on baking sheet. bake unti chicken in no longer pink in center (about 18-20min) or 170 degrees in the center.
