Marie Callendar's Cornbread Muffins Recipe

This recipe is adapted from "A Treasury of Top Secret Recipes," by Todd Wilbur (1999). Delicious; great with honey.

Ingredients
1 1/4 cups all-purpose flour
3/4 cup cornmeal
2 tsp baking powder
1/3 cup sugar
3/4 tsp salt
1 1/4 cups whole milk
1/4 cup shortening
1 egg
Directions
  1. Mix dry ingredients in medium bowl.

  2. Add all other ingredients and mix only until ingredients are just blended.

  3. Prepare muffin pan by spraying bottom and sides of muffin cups with non-stick cooking spray. Fill each muffin cup 2/3 full of batter.

  4. Bake at 400 degrees for twelve to fifteen minutes, or until muffins are beginning to turn golden brown on top.
