Leek, potato and carrot soup

Makes 2 servings

chunky and warming

Ingredients
175 g leek
1 tbsp olive oil
1 clove garlic
700 ml water
1/4 tsp cumin
175 g potato
125 g carrot
Directions
  1. saute leek and garlic in oil for 2-3 mins.

  2. add water (with veg stock added), cumin, and season.

  3. Add potato simmer for 10-15 mins.

  4. add carrot, simmer 2-3 mins.

  5. adjust seasoning.
