Crispy and fruity oatmeal cookies.

Ingredients

cups oatmeal |
| 1/2 |
cup light brown sugar |
| 1 |
large egg |
| 4 |
tbsp vegetable oil |
| 2 |
tbsp maple syrup |
| 1/2 |
tsp cinnamon |
| 1/2 |
cup apricots, chopped |
Directions
- Pre-heat oven to 375. Mix the oatmeal, apricots, and sugar in bowl, breaking up any sugar clumps.
- In a small bowl mix the egg, oil, maple syrup and cinnamon. Add to the dry ingredients and mix well. Leave 15 minutes to soak.
- Scoop teaspoons of the dough, make into a small ball with wet hands, and place at least 3" appart in a baking sheet lined with parchment paper. Flatten with a fork dipped in water.
- Bake for 10-12 minutes or until lightly browned. Let cool slightly before transferring to a wire tray to cool.
