Cran-Apple Oatmeal Bars Recipe

Yummy snack bars

Ingredients
3 cups rolled oats
1 cups whole wheat flour
2/3 c almond meal
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
1 1/2 cup splenda
1/4 cup fat free margarine
3/4 cup unsweetened applesauce
1 egg
1 egg white
2 teaspoons vanilla extract
1 cup dried cranberries
Directions
  1. Preheat oven to 350 f. Grease a 13x9 inch baking pan and line with parchment. Set aside.

  2. Combine the oats, flour, baking powder, baking soda, cinnamon, and salt in a large bowl.

  3. Beat together the sugar substitute and margarine in a separate bowl until fluffy. Beat in the appleasauce, egg, egg white, and vanilla. Add the oat mixture and stir to combine. Stir in the cranberries. Scrape the dough into the baking pan and bake for 20 minutes, or until a cake tester inserted in the center comes out clean. Let cool in the pan completely, then cut into bars.

  4. Storage: Place the bars in an airtight container and keep refrigerated for up to 5 days or freeze up to one month.
