cup mushrooms, diced |

onion, diced |

eggs, beaten |

cup parmesan cheese |

tsp basil |
Directions
- Wash and cut off ends of zucchini. Cook in boiling water for 7 minutes. Cut in half lengthwise, scoop out pulp leaving shell. (Save the pulp).
- Brown the sausage, onion and mushrooms. Drain the fat.
- Mix in the bread crumbs, eggs, zucchini pulp, paremesan and spices.
- Arrange zucchini shells on a baking pan. Fill each with sausage mixture.
- Bake at 350 degrees for 30 minutes. Let cool and serve warm.
