Mushroom and Ham Scambly Recipe

Ham mixed into scambled eggs served on Portabello Mushrooms

Ingredients
300 g mushroom (Portabello)
4 medium eggs
2 tbsp milk
60 g ham, shredded
2 tbsp chives, snipped
Directions
  1. Preheat grill on high. Once hot grill mushrooms for 6-7 minutes

  2. Meanwhile heat small saucepan to a medium temperature. Beat the eggs with the milk add salt and pepper then pour into the pan. Stir constantly then add the ham and keep cooking until the eggs are nearly cooked to you liking

  3. Remove the eggs from the heat, remove the mushrooms and place on a plate. Serve the egg and ham on top and scatter with the chives.

  4. Season and serve immediately.
