Ew Tuna Melt Recipe

Makes 4 servings


tuna with shallots, tomato and cheese

Ingredients
4 slices bread, whole wheat
12 oz tuna, chunk light, drained
2 tbs shallot, med minced,
1 tbs mayonnaise, reduced fat
1 tbs lemon juice
1 tbs parsley, flat leafed, mincec
1/4 tsp salt
1 dash of hot sauce
1 ground pepper
2 tomatoes, sliced
1/2 cup sharp cheddar cheese, reduced fat
Directions
  1. pre heat broiler

  2. toast bread in a toaster

  3. combine tuna, shallot, mayo, lemon j, parsley, salt, hot sauce and pepper

  4. spread 1/4 cup of tuna mixture on each slice of toast; top with tomato slices and 2 tbs of cheese, place sandwiches on baking sheet and broil until cheese is bubbly ( 3-5min)

  5. serve immediately
