tuna with shallots, tomato and cheese
| 4 | slices bread, whole wheat |
| 12 | oz tuna, chunk light, drained |
| 2 | tbs shallot, med minced, |
| 1 | tbs mayonnaise, reduced fat |
| 1 | tbs lemon juice |
| 1 | tbs parsley, flat leafed, mincec |
| 1/4 | tsp salt |
| 1 | dash of hot sauce |
| 1 | ground pepper |
| 2 | tomatoes, sliced |
| 1/2 | cup sharp cheddar cheese, reduced fat |
- pre heat broiler
- toast bread in a toaster
- combine tuna, shallot, mayo, lemon j, parsley, salt, hot sauce and pepper
- spread 1/4 cup of tuna mixture on each slice of toast; top with tomato slices and 2 tbs of cheese, place sandwiches on baking sheet and broil until cheese is bubbly ( 3-5min)
- serve immediately
