This is fast and easy and best of all FILLING!! Reduce fat and cholesterol by using equivalent amount of egg substitute if you like.
| 1 | large egg |
| 1 | tsp green pepper, diced |
| 1 | tsp onions, diced |
| 1 | tsp salsa |
| 1/8 | tsp mexican seasoning |
| 1 | 6" tortilla, flour |
| 1 | oz fat free cheddar cheese, shredded |
- Heat small skillet over med-high heat.
- Mix egg with mexican seasoning in bowl.
- Add onions, peppers and salsa to pan. Saute until translucent (1-2 minutes).
- Add egg mixture and scramble until set, stirring frequently.
- Sprinkle cheese over top of eggs and cover. Remove from heat. Let sit for 1 minute to melt cheese.
- Heat tortilla in microwave between two damp towels (15-20 seconds or so).
- Add egg mixture to tortilla and wrap burrito style.
