| 2 | tbsp sugar |
| 2 | tsp sugar (NOTE: use 1/3 cup lite sugar instead) |

| 1/2 | tsp cinnamon |
| 1/4 | tsp salt (optional) |
| 1/2 | c applesauce |
| 1 | egg white |
| 1/2 | c carrot, finely shredded |
| 1/2 | tsp vanilla |
| 15 | g walnuts, crushed |
- mix dry ingredients in one bowl and make a well in the center then add remaining ingredients.
- mix well and put in 8 cupcakes. bake at 180C for 30-35 mins
