Spinach & Feta Whole Wheat Pasta Recipe

Makes 12 servings


Quick and easy pasta dish with spinach, feta cheese, and grape tomatoes

Ingredients
12 oz whole wheat penne pasta
8 oz feta cheese
2 cups tomatoes, grape
10 oz spinach
2 tablespoons olive oil
1 tablespoon shallots
3 cloves garlic
1/2 teaspoon salt
1 teaspoon pepper
Directions
  1. Cook pasta to al dente and set aside.

  2. Defrost spinach, drain it well and set aside.

  3. Sautee garlic and shallots with one tablespoon of olive oil for one minute.

  4. Add tomatoes and cook until they start to open (2-5 minutes).

  5. Add spinach and toss in pot until spinach is warm.

  6. Remove from heat and combine with pasta. Toss the whole mixture with remaining olive oil, (no-)salt, and feta cheese.

  7. Makes twelve one-cup servings.
