Quick and easy pasta dish with spinach, feta cheese, and grape tomatoes
| 12 | oz whole wheat penne pasta |
| 8 | oz feta cheese |
| 2 | cups tomatoes, grape |
| 10 | oz spinach |
| 2 | tablespoons olive oil |
| 1 | tablespoon shallots |
| 3 | cloves garlic |
| 1/2 | teaspoon salt |
| 1 | teaspoon pepper |
- Cook pasta to al dente and set aside.
- Defrost spinach, drain it well and set aside.
- Sautee garlic and shallots with one tablespoon of olive oil for one minute.
- Add tomatoes and cook until they start to open (2-5 minutes).
- Add spinach and toss in pot until spinach is warm.
- Remove from heat and combine with pasta. Toss the whole mixture with remaining olive oil, (no-)salt, and feta cheese.
- Makes twelve one-cup servings.
