Quinoa Tabbouleh

Makes 4 servings

I found this recipe in Vegetarian Times. I LOVE that magazine.

Ingredients
1 cup quinoa
2 cups water
1/2 cup parsley
1/4 cup lemon juice
2 tbsp extra virgin olive oil
2 cloves garlic
Directions
  1. Combine Quinoa and 2 cups of water in medium sauce pan. Cover and bring to boil. Reduce heat and let simmer 15-20 minutes.

  2. Place quinoa in bowl. Fluff and let cool. Add remaining ingredients and salt to taste. Mix well. Chill.
