This is the recipe for the dough only (no toppings) for the almond cookies my mother makes every holiday season. These can be coated in sugar when they're fresh out of the oven or made into thumbprint cookies and filled with your favorite jam or chocolate.

Ingredients

cups ground almonds, ground |
| 1 1/2 |
cups all-purpose flour |
| 1 |
tsp salt |
| 1 |
cup butter, softened |
| 1 |
cup sugar |
| 2 |
eggs |
Directions
- Grind the almonds in a food processor until finely ground. Mix the ground almonds with 1 cup of flour and the rest of the ingredients.
- The dough should be firm with a consistency similar to sugar cookie dough. If the dough is too sticky, add in the rest of the flour until the desired firmness is reached.
- Chill dough for 30-45 minutes and preheat oven to 350 degrees.
- Form cookie dough into crescents (for dipping in sugar) or 1" balls (for thumbprint cookies). For thumbprint cookies, use your finger to make a depression in the center of the cookie ball and fill with jam, chocolate ganache, or your preferred filling.
- Bake for 12-15 minutes for crescents and 18-21 minutes for thumbprint cookies.
- For crescent cookies, coat the cookies in sugar within 1-3 minutes after removing from oven, being careful not to burn yourself or break the cookies.
