77 calories of heaven. Thanks to whomever made this recipe... The original recipe called for 1 tsp baking powder, but I didn't have any. They still turned out great! They are not as moist as other muffins because there is no added oil, and therefore less calorie dense. Spread a bit of honey on top for a fantastic icing, or lightly squirt chocolate syrup on for a sinfully finishing touch.
| 2 | bananas |
| 1 1/4 | cup flour |
| 1/4 | tsp salt |
| 2 | tsp honey |
| 1/2 | tsp baking soda |
| 1/4 | tsp vanilla |
| 2 | tbsp I Can't Believe It's Not Butter! Light (Soft) |
- Preheat oven to 375 F.
- Put honey, butter, and vanilla on skillet on low heat until melted. Then put aside.
- Mash bananas.
- Measure out dry ingredients.
- Blend (or hand mix) butter mixture with bananas.
- Make a hole in the dry ingredients and pour banana mixture in. Mix well.
- Pour into sheet and bake until golden brown. Recommended time was 20-25 minutes, but mine cooked in about 11. So go for 10 minutes, then keep an eye on them. Enjoy!
