Light Banana Honey Muffins Recipe

77 calories of heaven. Thanks to whomever made this recipe... The original recipe called for 1 tsp baking powder, but I didn't have any. They still turned out great! They are not as moist as other muffins because there is no added oil, and therefore less calorie dense. Spread a bit of honey on top for a fantastic icing, or lightly squirt chocolate syrup on for a sinfully finishing touch.

Ingredients
2 bananas
1 1/4 cup flour
1/4 tsp salt
2 tsp honey
1/2 tsp baking soda
1/4 tsp vanilla
2 tbsp I Can't Believe It's Not Butter! Light (Soft)
Directions
  1. Preheat oven to 375 F.

  2. Put honey, butter, and vanilla on skillet on low heat until melted. Then put aside.

  3. Mash bananas.

  4. Measure out dry ingredients.

  5. Blend (or hand mix) butter mixture with bananas.

  6. Make a hole in the dry ingredients and pour banana mixture in. Mix well.

  7. Pour into sheet and bake until golden brown. Recommended time was 20-25 minutes, but mine cooked in about 11. So go for 10 minutes, then keep an eye on them. Enjoy!
