Hybrid Oatmeal Cookies

Very low-cal, low-fat hybrid oatmeal cookie recipe, taken from Baking911.com and (yet again) tweaked to my liking. As usual, I have yet to attempt this in real life, but in theory it seems to work out rather well!

Ingredients
1/2 cup applesauce
1/2 cup sugar
1/2 cup brown sugar
2 egg whites
1 1/2 cups all-purpose flour
2 cups oatmeal
1/2 teaspoon cinnamon
2 teaspoons baking powder
1/2 cup skim milk
1/2 teaspoon vanilla or almond extract
Directions
  1. Preheat the oven to 375°.

  2. Use an electric mixer to cream together the applesauce and sugars; add the egg whites one at a time and beat until well blended.

  3. Combine the flour, oatmeal, cinnamon and baking powder in a bowl. Alternating with the milk, add the dry ingredients to the batter by hand, a little a time, stirring to blend. Stir in the vanilla / almond extract.

  4. Drop by teaspoons or tablespoons onto ungreased baking sheets and bake until lightly browned, 12 to 15 minutes. Cool for about 2 minutes on the sheets before using a spatula to transfer the cookies to a rack to finish cooling.
