Southwestern Salad Recipe

This is a really flavorful salad that is a favorite in our household. It's full of good nutrients, without making it too "diet-ish". It's satisfying in households where you're trying to accomodate both dieters and non-dieters.

Ingredients
6 cups Romaine Lettuce
2/3 cup Almonds, sliced
1 cup Sharp Cheddar Cheese, cubed
6 tablespoons Ranch Dressing

Corn & Black Bean Relish:
4 cups Tomatoe, diced
1/3 cup Onion, diced
1/3 cup Cilantro, chopped
1 cup Corn, drained
1 cup Black Beans, drained and rinsed
Directions
  1. For Corn and Black Bean Relish, combine Tomatoe, Onion, Cilantro, Corn and Black Beans in separate bowl. Set aside

  2. In salad bowl, layer Romaine Lettuce, Cheese, Corn and Black Bean Relish, Almonds, and Ranch Dressing. Enjoy!

  3. ** For meat-eaters, try adding in boneless, skinless, grilled chicken!
