Baked Polenta Recipe

From Food Network Kitchens Show: How To Boil Water Episode: Hot n' Spicy Difficulty: Easy Prep Time: 5 minutes Cook Time: 55 minutes Yield: 6 servings I don't remember eating polenta so this was a tasty treat. It is very easy to make, we added more jalapeno for our taste, and it warms up or grills great the next day. Great side dish.

Ingredients
4 cups water
1 cup cornmeal ( coarse-ground)
1 ear corn, shucked
1 jalapeno pepper, seeded and minced
2 tablespoons butter
3/4 cup shredded Monterey Jack cheese
1 teaspoon kosher salt
Directions
  1. Preheat the oven to 375 degrees F.

  2. Whisk cornmeal into water, add corn, pepper, cheese, butter, and salt.

  3. Cook until thick & creamy, about 10 minutes.

  4. Butter a 7 by 7-inch baking dish.

  5. Pour polenta into baking dish and bake 45 minutes.

  6. Turn on broiler and broil until bubbly, 2 to 3 minutes.
