It is very easy to make, we added more jalapeno for our taste, and it warms up or grills great the next day. Great side dish.
| 4 | cups water |
| 1 | cup cornmeal ( coarse-ground) |
| 1 | ear corn, shucked |
| 1 | jalapeno pepper, seeded and minced |
| 2 | tablespoons butter |
| 3/4 | cup shredded Monterey Jack cheese |
| 1 | teaspoon kosher salt |
- Preheat the oven to 375 degrees F.
- Whisk cornmeal into water, add corn, pepper, cheese, butter, and salt.
- Cook until thick & creamy, about 10 minutes.
- Butter a 7 by 7-inch baking dish.
- Pour polenta into baking dish and bake 45 minutes.
- Turn on broiler and broil until bubbly, 2 to 3 minutes.
