Makes 18 1 cup servings at 6 WW points each.

Ingredients
6 Chicken Breasts, boneless-skinless
1.93 cups (1 can -15.5 oz) Rotel Tomatoes
12 g (1/4 bottle) McCormick Mexican seasoning
1 large onion, diced and sautéed in
1 tsp olive oil
1.93 cups (1 can -15.5 oz) black beans, undrained
1.93 cups (1 can -15.5 oz) white beans, undrained
1.93 cups (1 can -15.5 oz) light kidney beans, undrained
1.93 cups (1 can -15.5 oz) dark kidney beans, undrained
1.93 cups (1 can -15.5 oz) Rotel tomatoes
12 oz V-8 Juice
12 g (1/4 bottle) McCormick Mexican seasoning
1 cup (1 can -8 oz) Tomato Sauce
Directions
  1. Sautee Onions in Olive Oil in pan.

  2. Place chix breasts on bottom of crockpot (mininmum size of 10 Quarts) and cover chicken with 1 can Rotel Tomatoes, sauteed onions and seasonings. Cook 6 hours minimum or overnight.

  3. Remove chicken, shread and put it back into crock pot and add the rest of the ingredients. Cook all day or until spices integrated properly.
