Strawberry Cupcakes

A boxed cake mix with strawberry yogurt, and applesauce instead of oil, made into cupcakes! The icing is included in the analysis; it's just cool whip and strawberry yogurt. Delicious served with sliced strawberries! (I'm eating one RIGHT NOW) Credit goes to morgaine, as she posted this recipe in the Recipe forum - I just entered it so I could get the nutritionals. Ingredients
12 servings Betty Crocker white cake mix
1 cup unsweetened applesauce
3/4 cup water
3 egg whites
1 1/2 cups strawberry yogurt, fat free
45 g cool whip lite
Directions
  1. (The 45 g of cool whip lite is 3/4 cups, and the 12 servings of cake mix is the entire box. I just couldn't get the recipe tool to analyze it properly if it entered it differently.)

  2. Heat oven to 350. Line 24 cupcake tins with paper wrappers. Remove cool whip from freezer to let it thaw.

  3. Mix together the cake mix, half of the yogurt (only 3/4 cups), the applesauce, the water, and the egg whites. Beat on medium speed until tasty-looking (ie, smooth).

  4. Pour into 24 prepared cupcake tins lined with paper wrappers. Each tin should be about 3/4 full.

  5. Bake for 20-26 minutes, or until a toothpick inserted in the center comes out clean. Remove and let cool.

  6. Mix together the cool whip and the remaining 3/4 cup of strawberry yogurt. Spread on cooled cupcakes.

  7. Serve with sliced strawberries if desired! (berries not included in analysis)
