Mocha Cupcakes Recipe

I made half the frosting for this recipe, and replaced most of the oil with applesauce.

Ingredients
1 1/2 cups all-purpose flour
1 cup sugar
1/3 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 cup coffee
1/8 cup vegetable oil
3/8 cup applesauce
3 teaspoons cider vinegar
3 teaspoons vanilla extract
3 tablespoons semisweet chocolate
1/6 cup butter
1 cups powdered sugar
1 tablespoons coffee
Directions
  1. In a small mixing bowl, combine the flour, sugar, cocoa, baking soda and salt. In a small bowl, whisk the eggs, cofee, oil, vinegar and vanilla. Add to dry ingredients; mix well.

  2. Fill paper-lined muffin cups three-fourths full. Bake at 350 for 20-25 minutes or until a toothpick comes out clean. cool for 10 minutes before removing from pan to a wire rack to cool.

  3. For frosting, in a small microwave-safe mixing bowl, melt chips; stir unitl smooth. Add butter; beat until blended. Gradualliy beat in powdered sugar and cofee. Pipe frosting onto cupcakes.
