Sauce: |

| 4 | medium tomatoes, chopped |
| 6 | oz. tomato paste |
| 1 | tsp. Italian seasoning |
| 1/2 | tsp. sugar |
| 1/8 | tsp. salt |
| 1/8 | tsp. pepper |
Pasta: |

| 7 | oz. penne pasta |
Topping: |

| 2/3 | cup part-skim mozzarella cheese |
- Prepare penne as directed on package. Rinse, drain, and set aside.
- In 2-quart casserole, combine all sauce ingredients. Cover. Microwave at High for 10 minutes, stirring once. Taste and add any other spices you'd like for taste. (I'd suggest a little garlic powder and basil.) Reduce power to 70%. Microwave for 8-10 minutes longer, or until flavors are blended, stirring once. Recover and set aside.
- Combine penne and sauce. Mix well. Top with mozzarella cheese. Reduce power to 70% again and microwave for 1-3 minutes or until the cheese is melted. Let stand for 1 minute and serve.
