Tania's Garlic Mashed Potatoes (B+) Recipe

Makes 3 servings


A lower calorie, lower fat version of one of my favorite side dishes.

Ingredients
2 cups diced potatoes
1/2 cup milk, lowfat 2%
1 1/2 tbsp margarine
2 tbsp minced garlic
1 tbsp minced chives
3/4 tsp salt
1/2 tsp pepper
Directions
  1. Peel and boil diced potatoes until fork tender, but not falling apart.

  2. Drain water (nothing's worse than watery mashed potatoes) and set potatoes aside in a separate bowl.

  3. Add margarine and garlic to pot and saute until garlic becomes fragrant.

  4. Add potatoes, milk, salt, and pepper to pot. Mash together and let simmer for about 5 minutes.

  5. Garnish with chives and serve.
