A lower calorie, lower fat version of one of my favorite side dishes.
| 2 | cups diced potatoes |
| 1/2 | cup milk, lowfat 2% |
| 1 1/2 | tbsp margarine |
| 2 | tbsp minced garlic |
| 1 | tbsp minced chives |
| 3/4 | tsp salt |
| 1/2 | tsp pepper |
- Peel and boil diced potatoes until fork tender, but not falling apart.
- Drain water (nothing's worse than watery mashed potatoes) and set potatoes aside in a separate bowl.
- Add margarine and garlic to pot and saute until garlic becomes fragrant.
- Add potatoes, milk, salt, and pepper to pot. Mash together and let simmer for about 5 minutes.
- Garnish with chives and serve.
