Pork Sinigang Recipe

Pork in a sour soup with vegetables

Ingredients
1 4/5 lbs pork ribs, boneless
1 lb chinese eggplant, chopped
1/3 lbs green beans, ends trimmed
4 large roma tomatoes, quartered
1 large yellow onion, quartered
4 cloves garlic, minced
1 tbsp canola oil
10 cups water
1 lb bok choy, chopped
Directions
  1. Brown garlic and onions in one tablespoon canola oil.

  2. Add boneless country-style pork ribs, chopped into one-inch cubes, and brown.

  3. Add remaining ingredients and bring to a boil.

  4. Add 1 tamarind soup packet (1.41 oz.) and boil an additional 20 minutes.

  5. Serve with jasmine rice.
