A healthy, quick, easy snack designed especially for teenagers with diabetes. Adapted from: www.kidshealth.org. Can also be used for people who are carefully monitoring their glucose levels. Prep time: 5 minutes.
| 1/2 | English muffin, whole wheat |
| 2 | tablespoons tomato sauce, no added sodium |
| 2 | tablespoons mozzarella cheese, part skim |
| 1 | tablespoon fresh basil, chopped |
| 2 | tablespoons tomato, diced |
- Preheat broiler, so that it will be ready to broil the pizza.
- Place 1/2 English muffin on a small baking sheet.
- Apply tomato sauce to the top of the muffin.
- Add cheese to the top.
- Lightly sprinkle those toppings with fresh basil and tomato.
- Broil the pizza until the cheese takes on a brownish tinge and the sauce is bubbly.
- Serve immediately.
