Chernobyl Veggies Recipe

very spicy vegetable stew or sauce - only if you like hot and spicy. Good for dieting, though - you can only eat so much before it burns too much......

Ingredients
2 tbsp extra virgin olive oil
1/2 cup cooking sherry
72 g carrot, sliced
120 g Broccoli, chopped
220 g onions, diced
36 g Garlic cloves, diced
300 g Zucchini, sliced
360 g tomatoes, diced
210 g mushrooms, sliced
2 cups tomato sauce
3 tbsp red pepper
3 tbsp black pepper
3 tbsp oregano
3 tbsp basil
2 tbsp rosemary
Directions
  1. Add Olive oil, Sherry, 1 tbsp each of Rosemary, Oregano, Red Pepper, black pepper and Basil, 1/2 cup Diced onion, 1/2 cup diced tomato, 3 or 4 cloves garlic (chopped or diced)in large frying pan. Simmer on very low heat

  2. Chop Carrot and add with some each of garlic, onion, tomato, red pepper, black pepper, rosemary, oregano, basil - will add same spices, onion and tomato with each main vegetable, ration accordingly.

  3. Let simmer 10 min, add chopped broccoli with same spices, onion, & tomato. Add 1 cup tomato sauce

  4. Simmer 10-15 min, then add Zucchini with same spices, onion, tomato, and 1/2 cup tomato sauce

  5. Simmer about 15 min (until carrots, broccoli, and zucchini are slightly softened), then add Mushrooms with same spices, onion, tomato, and tomato sauce.

  6. Simmer another 10-15 min. until all vegetables are slightly softened. They should not be mushy, just not raw, either.

  7. Drain excess liquid for slightly less spicy version or leave for more kick. Can be eaten as a pasta sauce, on rice, or by itself. (by itself, use only initial 1/2 cup tomato sauce and don't add the rest.
