Mandarin Orange & Red Onion Salad Recipe

Quick tasty salad.

Ingredients
1/2 cup almonds, sliced
1 tbsp. Smart Balance light buttery spread
2 tbsp. lemon juice
1 tsp. Dijon mustard
1/2 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper(white)
1/2 cup vegetable oil
1 head romaine lettuce, torn into pieces
11 ounce can) mandarin orange segments, drained
1 small red onion, thinly sliced
Directions
  1. Saute almonds in butter until golden; reserve.

  2. Combine next 5 ingredients.

  3. Whisk in oil.

  4. Combine lettuce, oranges, onion, and almonds.

  5. Toss with dressing.
