Ingredients

tbsp extra virgin olive oil |
| 1 |
medium onion, chopped |
| 3 |
c. stock, vegetable |
| 14 1/2 |
oz tomatoes, diced |
| 1 |
can (15 oz) beans, black |
| 15 |
oz pumpkin, canned |
| 1 |
cup skim milk |
| 1 |
tbsp curry powder |
| 1 1/2 |
tsp cumin |
| 1/2 |
tsp cayenne powder |
Directions
- Heat a soup pot over medium heat
- add oil
- when oil is hot add onion
- satue onion 5 mins
- add broth tomatoes beans and pumkin
- stir to combine and bring to a boil
- reduce heat to medium low and stir in cream and spices
- simmer 5 minutes and serve garnished with chopped chives
