Tania's Waldorf Chicken Salad Recipe

Makes 4 servings


A lowfat, low-cal, low-carb take on the traditional Waldorf Chicken Salad.

Ingredients
1 1/2 chicken breast, meat only
1/2 cup fat free mayonnaise
1/8 cup chopped celery
1 tbsp chopped onion
1 cup chopped apples (green)
1/4 cup chopped walnuts
1/2 cup shredded monterey jack cheese
3 tsp mustard
1/2 tsp salt
1/2 tsp pepper
Directions
  1. Season chicken breasts to your liking and roast in 425 degree oven for about 1 hour, or until desired tenderness. Or you may just purchase a roasted chicken from your local supermarket.

  2. Shred chicken and discard skin and bones.

  3. In a large bowl combine all ingredients and add salt and pepper to taste.

  4. Serve over a bed of lettuce, in a sandwich, or by itself.

  5. Enjoy.
