| 2 | cups chickpea, cooked |
| 1/4 | cup mint, chopped |
| 1/4 | cup coriander, chopped |
| 1/2 | tsp black pepper |
| 1/2 | tsp salt |
| 2 | tbsp ginger, grated |
| 60 | g green peppers, chopped |
| 1/2 | cup corn kernels, chopped |
| 100 | g breadcrumbs, fresh |
| 1/2 | cup red bell pepper, grilled, skinned, seeded, diced |
| 3 | tbsp olive oil |
- Combine first seven ingredients and blend coarsely.
- Add corn and blend again.
- Stir in breadcrumbs and capsicum and mix evenly.
- Mould into 14 patties.
- With a shallow fry pan and olive oil, fry each side for 3 minutes.
