Chickpea, Corn and Capsicum Patties Recipe

Makes 7 servings


Defrost and microwave two each for protein in sandwich daily. Vegan.

Ingredients
2 cups chickpea, cooked
1/4 cup mint, chopped
1/4 cup coriander, chopped
1/2 tsp black pepper
1/2 tsp salt
2 tbsp ginger, grated
60 g green peppers, chopped
1/2 cup corn kernels, chopped
100 g breadcrumbs, fresh
1/2 cup red bell pepper, grilled, skinned, seeded, diced
3 tbsp olive oil
Directions
  1. Combine first seven ingredients and blend coarsely.

  2. Add corn and blend again.

  3. Stir in breadcrumbs and capsicum and mix evenly.

  4. Mould into 14 patties.

  5. With a shallow fry pan and olive oil, fry each side for 3 minutes.
