Zucchini Frittata Recipe

Great and low cal! Matzo flour works really well with this instead of the whole wheat flour.

Ingredients
2 zucchini, grated
1 egg
2 egg whites
1 oz nonfat cottage cheese
1 oz reduced fat mozzarella , shredded
1 oz reduced fat cheddar , shredded
1 tbsp whole wheat flour
1 Salt, pepper, italian seasoning to taste
Directions
  1. Mix all ingredients and bake in a Pyrex dish! Bake at 350deg until top gets golden brown.

  2. Instead of 1 tbsp flour I actually used 1/2 tbsp flour and 1 tsp mushroom bouillon. 1 tbsp flour is about the caloric equivalent.
