Great and low cal! Matzo flour works really well with this instead of the whole wheat flour.
| 2 | zucchini, grated |
| 1 | egg |
| 2 | egg whites |
| 1 | oz nonfat cottage cheese |
| 1 | oz reduced fat mozzarella , shredded |
| 1 | oz reduced fat cheddar , shredded |
| 1 | tbsp whole wheat flour |
| 1 | Salt, pepper, italian seasoning to taste |
- Mix all ingredients and bake in a Pyrex dish! Bake at 350deg until top gets golden brown.
- Instead of 1 tbsp flour I actually used 1/2 tbsp flour and 1 tsp mushroom bouillon. 1 tbsp flour is about the caloric equivalent.
