Menemen (Turkish Scramble) Recipe

Makes 2 servings


A favorite breakfast when I was traveling through Turkey. I left out the chopped onion, and added avocado (I'm from California, after all.) The cheese is also optional.

Ingredients
3 eggs, scrambled
1 cup tomato, diced
1/2 green pepper, diced
1 tsp garlic paste
2 oz. goat cheese
1/2 avocado, sliced
1 dash of salt
1 dash of pepper
Directions
Fry garlic and pepper in olive oil over low heat until garlic is golden, then add tomatoes and sweat for about a minute. Pour in egg mixture, stir. When it's fairly set, crumble in goat cheese (or top finished scramble with another cheese). Serve with half an avocado, sliced. YUM!
