A favorite breakfast when I was traveling through Turkey. I left out the chopped onion, and added avocado (I'm from California, after all.) The cheese is also optional.
| 3 | eggs, scrambled |
| 1 | cup tomato, diced |
| 1/2 | green pepper, diced |
| 1 | tsp garlic paste |
| 2 | oz. goat cheese |
| 1/2 | avocado, sliced |
| 1 | dash of salt |
| 1 | dash of pepper |
Fry garlic and pepper in olive oil over low heat until garlic is golden, then add tomatoes and sweat for about a minute. Pour in egg mixture, stir. When it's fairly set, crumble in goat cheese (or top finished scramble with another cheese). Serve with half an avocado, sliced. YUM!Categories
