Crockpot Pork and Sweet Potato Stew Recipe

Apples, sweet potatoes and apple juice make this delicious 5-ingredient crockpot stew with chunks of pork shoulder super easy.

Ingredients
1 lb. boneless pork shoulder, cut in 1" cubes
3 c sweet potatoes, peeled and cubed
2 apples, cored and chopped
1 onion, chopped
1/2 t dried thyme leaves
1/4 t pepper
1/2 t salt
2 c apple juice
Directions
  1. Layer sweet potatoes, apples and onion in 4-5 quart slow cooker. Sprinkle with thyme, salt and pepper, then top with pork cubes. Pour apple juice over.

  2. Cover crockpot and cook on low for 7-8 hours until meat and veggies are tender.
