Apples, sweet potatoes and apple juice make this delicious 5-ingredient crockpot stew with chunks of pork shoulder super easy.
| 1 | lb. boneless pork shoulder, cut in 1" cubes |
| 3 | c sweet potatoes, peeled and cubed |
| 2 | apples, cored and chopped |
| 1 | onion, chopped |
| 1/2 | t dried thyme leaves |
| 1/4 | t pepper |
| 1/2 | t salt |
| 2 | c apple juice |
- Layer sweet potatoes, apples and onion in 4-5 quart slow cooker. Sprinkle with thyme, salt and pepper, then top with pork cubes. Pour apple juice over.
- Cover crockpot and cook on low for 7-8 hours until meat and veggies are tender.
