Banana Mash 'Omelette'

Makes 1 serving

Nothing pretty to look at, but it's a decent sized omelette for 79 calories, high in protein and fiber, and could be a great dessert - just add a bit of cool whip! It really filled me up, too.

Ingredients
1/4 cup water
1/2 banana
1 egg white
1/2 tbsp cinnamon
Directions
  1. Pour the water with your mashed banana and microwave for about a minute.

  2. Mix in the egg white and add the cinnamon. You may want to use a blender to get the egg white really mixed in there - otherwise it'll turn out chunky.

  3. Pour into pan with cooking spray and wait for it to brown. You can try flipping this, but my attempt failed. I prepared it like scrambled eggs.
